INFLUENCE OF NUTRITION ON THE ANTIOXIDATIVE POTENTIAL OF THE SKIN

ABSTRACT

Antioxidative potential of the living human skin is the natural balance between the joint action of different antioxidant substances, such as carotenoids, vitamins, enzymes and others, which possess a synergic effect, and protect the living cells from destructive action of free radicals and ROS.

Carotenoids are effective antioxidants for the protection of living organisms and plants against aggressive influences of the environment, which produce amounts of free radicals.

Human organism cannot synthesize carotenoids and vitamins as opposed to enzymes; thus, they can be transferred only from supplements or topically.

Resonance Raman spectroscopy was used for the fast and non-invasive detection of carotenoid antioxidant substances in foodstuffs and in the skin.

Carotenoids of juices, the yolk of eggs, peel and pulp of potatoes, bananas, apricots, plums, yellow and red peaches and nectarines were measured.

Moreother, dynamic of the carotenoid degradation in the foodstuffs, subsequent to external influences, such as boiling, preservation and normal degradation was analyzed.

Carotenoid-rich diet, based on large amounts of carotenoid-rich fruit and vegetables as well as eggs, led to an increase in the measured carotenoid antioxidant level of the skin.
